RECIPE

Irish Spice Bread

1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1/4 cup brown sugar
2 tablespoons candied orange peel
1/2 cup raisins, golden or plain
1/4 cup butter, melted and cooled
3/4 cup light corn syrup
1 egg, beaten
1/4 cup milk, room temperature

Preheat oven to 325 degrees. Lightly grease 2-pound loaf pan. Combine first 8 ingredients (flour through sugar) with a wire whisk. Stir in orange peel and raisins. In a small bowl, combine rest of ingredients and add to dry mix. Stir to just combine. Do not over mix. Pour batter in pan and bake for 40 to 50 minutes. Note: One teaspoon of pumpkin pie spice can be used instead of the cinnamon, nutmeg, allspice and ginger.
