NOTE FROM STACY It's an exciting month here at Stacy McBride Collections as
we get ready to gather our consultants together for our 2009
Annual Celebration in beautiful Portland, Oregon!
This will be the first time many of us will have the chance to
meet each other in person. It will be a time of sharing stories, celebrating
successes and brainstorming. We have a wonderful weekend planned
with our very own Stacy McBride Party, A world-class training agenda,
activities, awards dinner and the unveiling of two brand new collections
that will be unlike anything we have offered before.
This year's theme is "The Star Within You" and
I think it is such an appropriate title, not only for our Stacy McBride
Consultant Team, but to all of us as women and what we can do. We are amazing
creatures! We are Wives, Mothers, Daughters, CEOs of our businesses and households,
engineers, event planners and so much more! We can truly make things happen when we put our mind to it, focusing on
the goals for each day. So ladies, take the time to acknowledge yourself for
all that you do, and what you are capable of.
You have much to be proud of! Each of you is a star, so shine on and enjoy all of the great things life brings
your way!

RECIPEPesto, Cheese and Sundried Tomatoe Palmiers

1 pkg. (17.3 oz) Frozen puff pastry sheets
1/4 cup prepared pesto
1/2 cup crumbled feta or goat cheese
1/4 cup finely chopped sun-dried tomatoes
1/4 cup walnuts, chopped (optional)
1. Thaw pastry sheets at room temperature for 40 minutes.
Line 2 baking sheets with parchment paper.
2. Unfold 1 pastry sheet on a lightly floured surface. Spread
1/2 of the pesto over pastry. Top with 1/2 of the cheese, 1/2 of the
tomatoes and 1/2 of the walnuts (if desired). Starting on one long side of
the pastry sheet, fold towards center, leaving 1/4" space in center. Fold
the other side towards center, then fold one side over the other to make
a 4-layer rectangle. Repeat with remaining pastry sheet, pesto, cheese and
nuts. Cover pastry rectangles with plastic wrap and refrigerate for 45 minutes.
3. Heat oven to 4oo degrees. Cut each rectangle into 15 (1/4") slices. Place cut-side
down, 2" apart on a prepared baking sheets.
4. Bake for 14 minutes or until gold, turning over halfway through baking. Remove and
cool slightly on wire racks.
