NOTE FROM STACY

Happy May, Happy Mother's Day!
As we celebrate Mother's Day this month, I want to say a HUGE thanks to my mom. I know she went through her share of rolled eyes, and yes, some teenage behavior that probably wasn't as respectful on my part as she deserved. Through it all she was there for me, giving me guidance, support and love.

When our lives changed suddenly eight years ago, with my father's first stroke, I began to see even more positive attributes within my mom. She has shown patience, strength, a positive spirit and unconditional love in caring for my father and our family. She continually amazes me and makes me want to be a better person, even in the most trying of times.

Mom, thanks for all you have done. You truly inspire me.

RECIPE

Tropical Granita
One of Stacy's favorites

Ingredients:
1-20 oz can crushed pineapple in juice
1-11.5 oz can papaya juice
2 Tbsp Frozen concentrated lime-aid
1/2 tsp coconut extract

Stir all together in a 9 X 13 pan. Freeze 6 hours or overnight. When ready to serve, let soften for about 15 minutes. Scrape with fork until slushy. Put into a short glasses and garnish with a pineapple wedge.
