RECIPE

Mango Sorbet submitted by Kimberly Smith (WA) 1 cup sugar
1 envelope unflavored gelatin
1 1/2 cups boiling water
1 1/2 cups fresh mango puree, about 2 to 3 mangos
1 cup milk
2 Tbl. freshly squeezed lime juice
2 egg whites

In a large metal bowl, combine 3/4 cup sugar and gelatin. Add boiling water, stir until sugar and gelatin completely dissolve. Cool to room temperature. Stir in mango puree, milk, and lime juice.Place bowl in freezer for 1 1/2 hours or until mixture is frozen about 1/2 inch around sides of bowl. Beat with electric mixer or wire whisk until smooth. Beat egg whites with remaining 1/4 cup sugar until stiff peaks form; fold into mango mixture. Return mixture to freezer. Freeze several hours or until firm. Makes 1 1/2 quarts. Enjoy!
