NOTE FROM STACY

Hello and happy summer! Living in the Pacific Northwest has always made me fond of the beach. I had the joy of growing up on the water, playing in the sand, collecting shells and rocks. As I was walking along the beach the other day I was reminded of a story I had pulled from a magazine a few years ago and have kept in little box with some of my favorite "beach finds." I wanted to share it with you and hope you enjoy it as much as I do every time I read it.

The Starfish Story
A little girl was walking along a beach that was covered with thousands of starfish left dying in the sun by the receding tide. Seeking to help, she picked up a starfish and tossed it back into the ocean. A man, amused by her action, said to her "Little girl, there are too many starfish. You will never make a difference." Discouraged, she began to walk away. Suddenly, she turned around, picked up another starfish and tossed it as far as she could back into the sea. Turning to the man, she smiled and said, "I made a difference to that one!" The man looked at the girl inquisitively and thought about what she had done. Inspired, he joined the little girl in throwing the starfish back into the sea. Soon others joined in, and all of the starfish were saved.

RECIPE

Light and Easy Rootbeer Float Ice Cream Pie

1 Cup graham cracker crumbs
2 Tablespoon butter, melted
2 Tablespoons 1% low-fat milk
1 (7 oz) jar marshmallow creme
2 Teaspoons rootbeer extract (can adjust to taste)
1 (8 oz) container frozen fat-free whipped topping
3 Cups vanilla low-fat cream, softened

Spray 9" springform pan with cooking spray. Combine graham cracker crumbs and melted butter in a small bowl; stir with a fork until moist. Press into bottom of springform pan. Chill.

Combine milk and marshmallow creme in a microwave safe bowl; microwave on high for 1 minute, stirring once. Add rootbeer extract and whipped topping , stirring until blended. Spread the softenend ice cream over chilled crust, top with marshmallow mixture. Freeze at least 6 hours.

Serves 12. (234 calories per serving, 4.4g fat)
