SUMMER RECIPE

This is a family favorite in the summer because it tastes so fresh, and is quick and easy!

Red Raspberry Pie

4 Cups fresh raspberries
1 Cup sugar
2 T. Cornstarch
1 baked pie shell, sprinkled with a small amount of powdered sugar
Whipping cream

Crush 2 cups of the berries. Mix with sugar and cornstarch. Cook in saucepan until thick and smooth, making sure to stir frequently. Cool. Spread the remaing 2 cups of berries over the pie shell. Cover with the cooled berry mixutre. Chill. Garnish with freshly whipped cream and a sprig of mint.
